I love our new toaster oven. I call it my mini baking machine.

Yesterday morning I decided to make some biscuits for breakfast, since we're out of bread (I hope to be able to bake some soon...). I was about to preheat the oven, when I realized the toaster oven heats up in no time, and I was only making 2 biscuits anyway. Perfect.

I used the biscuit mix recipe that I've used for chicken pot pie topping, adding a little less milk. They turned out very tasty, but a bit too crumbly. I wonder if kneading the dough a little before shaping it would help them hold together better.

Makes 2 biscuits

1/2 cup plus 2 tbsp all-purpose flour
1 1/2 tsp baking powder
1 tsp sugar
pinch salt
2 tbsp butter
1/4 cup milk

Preheat oven to 375°F.

Combine flour, baking powder, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk until dough holds together and is easy to handle.

Divide in half and form into 2 discs, about 1/2-inch thick. Place on a baking sheet and bake for about 15 minutes or until golden.
