Banana Nut Bread

It was time to partially deplete my stash of over-ripe, frozen bananas. I used the same basic recipe that I've used the last couplelast couple times, but tried it in a loaf pan instead of an 8"x8" dish or muffin tin. I didn't bother with the cinnamon-sugar topping or toasting the walnuts, and it was just right.

3 ripe bananas
2 large eggs
1 tsp vanilla extract
1 cup sugar
2 tsp cinnamon
1/4 tsp freshly grated nutmeg
1 1/2 cups white whole wheat flour
1 tsp baking soda
3/4 cup coarsely chopped walnuts

Preheat oven to 350°F. Spray a 8"x4" loaf pan with cooking spray.

In a large bowl, mash the bananas with a fork or potato masher. Add eggs and vanilla and combine. Add sugar, cinnamon, nutmeg, flour, and baking soda and mix just until moistened. Fold in the walnuts. Pour batter into prepared pan.

Bake for about 65 minutes, or until toothpick inserted in center comes out clean. Let cool in pan on wire rack.
