Crab Quesadillas

I was going to just make crab cakes again with the rest of the crab meat, but I felt like doing something different. After a little searching around I came across this recipe for crab quesadillas.
They were pretty good. Definitely different.
Adapted from Closet Cooking
1/4 lb crab meat
1/4 cup black beans
1 small tomato, seeded and chopped
2 tbsp chopped cilantro
1 green onion, chopped
1 jalapeno, finely chopped
juice of a lime
1/2 tsp ground cumin
salt & pepper, to taste
1 cup shredded colby/monterey jack cheese
2 large tortillas
Combine all ingredients except cheese and tortillas. Marinate for 10-30 minutes.
Spray a griddle with cooking spray and heat over medium heat. Place a tortilla on the hot griddle and sprinkle evenly with 1/2 cup of the cheese. On half of the tortilla spread a layer of the crab mixture. Fold the tortilla in half and cook, flipping once, until both sides are browned and cheese is melted. Remove to a cutting board and slice into wedges. Repeat with remaining tortilla, cheese, and crab mixture.
Serve with salsa and sour cream if desired.
