Crab Cakes

These were delicious. I thought the can of crabmeat I bought was jumbo lump, but when I opened it I saw that it wasn't. Oh well. They still turned out great. I was going to try baking them, but the oven wouldn't work againagain (it worked this weekend when I had to make an angel food cake - what the hell), so I fried them on my griddle sprayed with cooking spray. They were probably better this way.

1/2 cup whole wheat bread crumbs (1 slice of bread chopped in food processor)
1 green onion, chopped
2 tbsp mayonnaise
1/2 tsp Dijon mustard
2 tbsp beaten egg (if doubling the recipe use 1 large egg)
1 tbsp chopped fresh parsley
1/2 tsp Old Bay seasoning
1/2 lb crab meat

Combine all ingredients except for crab in a medium bowl. Add the crab and mix together gently but thoroughly. Form into 4 patties about 1/2" thick.

Spray a frying pan or griddle with cooking spray. Heat on medium-high heat. Cook crab cakes on both sides until golden, about 2 minutes on each side.

Serve with lemon wedges.
