Mojo Pork
mojo pork with mango-pineapple salsa

Very flavorful and juicy. We had it with corn on the cob (which was still finishing on the grill at this point). The recipe for the marinade came from my Better Homes & Gardens cookbook. I've had it bookmarked for a while now but this is the first chance I've had to make it. I'm glad it didn't disappoint!

4 boneless pork loin chops (1 - 1 1/4 lbs)
2 chipotle peppers in adobo sauce, stems removed
1/4 cup orange juice
2 tbsp coarsely chopped onion
1 tsp dried oregano
1 tbsp lime juice
1 1/2 tsp honey
1/4 tsp salt
2 cloves garlic, minced

Place meat in a plastic bag set in a shallow dish. For marinade, blend remaining ingredients until smooth. Pour over meat, seal bag, and marinate in the refrigerator for 2 hours, turning bag occasionally.

Grill or broil until internal temperature reaches 160°F.
