Pizza with Summer Squash and Red Onion

![]() I picked the first of the yellow summer squash from my garden a few days ago, and there are plenty more where that came from. I've been trying to think of new ways to prepare them, so I tried pizza. The dough came from Trader Joe's, which is a great alternative to homemade when there just isn't time to make it from scratch. I stretched out the dough, spread it with ricotta cheese and then some homemade sauce (this time I left out the onion, used fresh oregano, and pureed the tomatoes beforehand). I topped it with thinly sliced squash and red onion, then mozzarella cheese. It baked for about 12 minutes at 450°F, and when I took it out I sprinkled it with grated Parmesan and fresh basil. Delicious! |
