Beef Stew with Homemade Noodles

![]() Last time I made this it was so much better and I'm not sure why. The recipe that I wrote out didn't say to cover it after adding the vegetables, and this time I did, so maybe that's why it wasn't as thick. The liquid didn't get a chance to evaporate. Also, I don't think I added as much salt this time. I decided to add some parsnips along with the carrots and potatoes, and I served it over homemade noodles, which were good. I used the same pasta recipe as last time but I halved it and used white whole wheat flour. I wanted wide noodles, so I cut them by hand, about 3-4 inches long by 1/2-1 inch wide. It made enough noodles for about 3 or 4 servings, but I had more like 6 or 7 servings of the stew.
