Banana Muffins

![]() This is the same basic recipe I used for the banana oatmeal cake. I had two small bananas getting brown on the table so I decided to whip up a few muffins. They were really tasty fresh from the oven (cooled off a bit, of course). The top was still crunchy with cinnamon sugar. Tomorrow they will have softened a bit. 2 small bananas 1 large egg 1/2 tsp vanilla extract 1/2 cup sugar (divided) 1 tsp cinnamon (divided) dash grated nutmeg 3/4 cup flour 1/2 tsp baking soda 2 tbsp wheat germ Preheat oven to 350°F. Grease or line 6 muffin cups. In a small bowl, stir together 1 tablespoon of the sugar and a pinch of the cinnamon for the topping. In a bowl, mash bananas with a fork. Add egg and vanilla and combine. Add remaining sugar and cinnamon, nutmeg, flour, baking soda, and wheat germ and mix just until moistened. Pour batter into prepared muffin cups. Sprinkle topping evenly over the batter. Bake for 20-25 minutes, or until toothpick inserted in center comes out clean. Remove muffins to cool on wire rack. |
