Sloppy Joes

I have no picture for this one, but they weren't very pretty to look at anyway. They did taste good though. I used the one and only pepper that my garden has produced (so far). We ate these on really soft buns, so they were extra sloppy. I should have toasted the buns or something. 1 tbsp olive oil 2 cloves garlic, minced 1/2 large onion, or 1 small onion, chopped 1 small red pepper, chopped 1 lb ground beef 1 tsp prepared mustard 1/2 tsp paprika 3/4 cup ketchup 1 tbsp brown sugar 1 cup water In a large skillet heat olive oil over medium heat. Add garlic, onion, and pepper, and saute until softened. Add ground beef and cook, breaking up the lumps, until the meat is no longer pink. Drain off the fat, then add the remaining ingredients and mix well. Bring to a boil then reduce heat and simmer for about 30 minutes or until the water has evaporated and the mixture is thick. Taste and season with salt and pepper if desired. Makes enough for about 4 sandwiches |
