Sweet Corn & Black Bean Salad
Serves 4-6
2 ears corn
1 15-oz can black beans, drained and rinsed
3 medium tomatoes, chopped
1 jalapeno, finely chopped
1/4 large red onion, chopped
1-2 cloves garlic, minced
salt & pepper
juice of 1 lemon or lime
a couple sprigs of cilantro, minced
Cut the kernels off the ears of corn into a large bowl. Add remaining ingredients and toss together. Taste, and adjust seasonings as desired.
