Peanut-Butter Oatmeal Cookies
Adapted from the Better Homes and Gardens CookBook 1/2 cup butter, softened 3/4 cup peanut butter 1 cup granulated sugar 1/2 cup packed brown sugar 1 tsp baking powder 1/2 tsp baking soda 2 eggs 1 tsp vanilla 1 1/4 cup all-purpose flour 2 cups rolled oats 1 cup chopped peanuts In a large mixing bowl beat butter and peanut butter with an electric mixer on medium to high speed about 30 seconds or until combined. Add granulated sugar, brown sugar, baking powder, and baking soda. Beat until combined, scraping sides of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in rolled oats and peanuts. Roll dough into one inch balls, place 2 inches apart on an ungreased cookie sheet, and flatten slightly. Bake in a 375° oven about 10 minutes or until edges are lightly browned. Transfer cookies to wire rack and let cool. Makes about 70 small cookies |
